The origins of the ratafia are related to medicinal and digestive principles and the most ancient formulas prepared in monasteries and convents. The ancestral and complex preparation of this liquor has been transmitted through generations. Originally produced as a popular spirit in several places of Europe, places always very special, where miraculous properties were legendary attributed.

The classical Catalan ratafia is produced following a traditional and punctilious recipe that pursues at the same time medicinal and digestive properties as well as an exquisite palate. Species and fruits, among which unripe and tender walnuts are the most important part, are prepared following a complex formula of herbs and aged for 5 months.
Packed in bottles of 70 cl. Each pack including 6 bottles.
Tender walnuts ratafia can be found in several points of Catalonia (Ripollès, Alt Urgell, Empordà, Pallars Jussà, Bages and also in Segarra Counties) and Europe (Switzerland, Poland and some regions in the East and North of Italy, like Piemonte, Emilia-Romagna or Ticino). Some of these spirits are named also ratafia or walnuts spirit. Maybe the most famous is the Italian nocino, produced in the region of Mòdena with dedicated fairs organised since 180 years ago.
Ratafia Russet follows the Garrotxa County traditional walnut recipes also oftenly followed in zones of mountain. Recipes usually linked to Verdaguer legend.

Since 1903, Ratafia Russet, today managed by the fourth family generation, keeps producing ratafia in a home-made way, following traditional methods, improving processes of maceration, ageing and filtration and trying to optimize the collection and manipulation of the aromatic plants and tender walnuts that integrate the prestigious formula.
The unripe walnuts, indispensable ingredient for the elaboration, come from family walnut trees as well as from Mas Bassols de la Cot, Ca n'Illa de Sant Jaume de Llierca and Can Mistos de Montagut.
In its facilities the distillation of the liquor follows the same steps than at home, with the suitable instruments for senior amounts, like deposits of stainless steel, pumps, filters and oak barrels for the ageing.
