History:
One of the most traditional and easy meals in catalan cooking. Origined in farmers kitchens, this is as simple as grilling some vegetables. Once cooked, just peel, cut and add oil and salt.
This is currently considered as a salad that can be eaten with cheese, meat, fish, etc and not alone.
It is different from Ratatouille because it's healthier: escalivada is not fried but cooked in the oven or with embers.
