Chicken with mushrooms

    History:

Usually cooked on celebration days due to its basis: chicken. Historically chicken has been really appreciated, turning it expensive and so reserved for exceptional days.

This dish is usually cooked on autumn when mushrooms are already available and may easily be combined with poultry.

Mushrooms deserve a special chapter due to great importance in our catalan cooking tradition. Already mentioned in Middle Ages cooking books, nowadays, TV shows, mushroom asociations, cooking clubs and several fairs have mushrooms as the main actor. Morella is an exemple where mushroom takes its part.

Ingredients:

chicken, mushrooms (rovellons preferred), minced pork meat, onions, garlic, tomatoes, bay leaves, almonds, eggs, bread, flour, salt, pepper and olive oil.
